Anita Jaisinghani was born and raised in India, and has been at the helm of Indika (a highly-lauded and award
winning restaurant in Houston) for nearly 10 years. An avid traveler, reader, and a devoted yogi, her true passion
is creativity in food. She harnesses her scientific background to experiment with ideas that blend flavors of her native
Sindh culture with local Texas ingredients using techniques she has learned thru her childhood and her travels.
'Pondicheri' is the original name of a small coastal town, off the Bay of Bengal in South India,
where Anita was a frequent visitor in her childhood days. Known also as Pondicherry or Poducherry,
the city rose to importance in Anita's life when she was diagnosed with a serious bout of childhood malaria,
and rushed to the Aurobindo Ashram for healing. Anita's mother truly believed that her miraculous recovery
was a direct result of the poetic blessing bestowed upon her by the ashram's matriarch.
'You are what you eat'
Whether you are a chai, curry, or cardamom cookie, we passionately guarantee your composition is of raw,
local, uncompromising quality. We savor the blossoming need to use ingredients of purity along with a desire
for hand-made quality. Together, these stamp our food with the fingerprints of true oxygenated existence.
It is with utmost pride and pleasure that we roast and grind our spices, sing songs to our yeast starters,
grind our meat, and most importantly cherish our kitchen. Cooking
wholesome nourishment tingles us with a fervor that indulges our ever-present lust to feed.
A sustainable eco-friendly to-go system based on the age old "tiffin" carriers of Mumbai,
where freshly cooked food is packed hot in a container called a tiffin - affectionately named "Pondi," for
our purposes. The food remains warm for up to sixty minutes in these shiny, stacked stainless steel containers.
You may bring your old dirty Pondi back when you return, and we will pack your new order in a new, clean Pondi!
Pondis are available for purchase for a $25 "non-refundable deposit." You may keep your Pondi and use it only at home, give it as
a gift, or you may enter it into the Pondi Exchange program---just remember that when you turn in your dirty Pondi, you will receive
a different clean one in its place.
